Jambalaya..well, sort of

1 pkg smoked sausage (I use turkey)
1/2 lg. onion, diced
3-4 strips of bacon, cut in small pieces
2 T. butter
1 beer
2 cups water
3 t. chicken bouillon
1 1/2 c. white rice (uncooked)
1 (depending on taste) jalapeno, diced
2 cloves minced garlic
3 T. cajun spice mix
frozen vegetables (1 1/2 cups total...I used corn, spinach, and some mixed veggies)

Melt butter in large pot.  Add onion, bacon, jalapeno.  Cook til onions are translucent. Add sausage (sliced on a bias).  Add garlic.  Add 1T. cajun spices.  Cook till sausage is heated through and begins to brown a little.  De-glaze pan with the beer. Heat should be at about a 9 .  Scrape up bits from the pan.  Add water and bouillon.  Return to a boil.  Add vegetables and remaining spice.  Reduce heat and simmer for 30 minutes or so.  Add rice.  Cook for 5-10 minutes.  If too much liquid is absorbed, add a little more.  It should be thicker than a soup, but should have some liquid.  Serve in a bowl with garlic bread.
